Panna cotta is a classic Italian dessert which literary means “cooked cream.” This version is intensely rich, silky-smooth, and creamy with a luxurious melt-in-your-mouth texture. It is also incredibly easy to make. It has been said that if it takes you more than five minutes to put it together, you’re doing something wrong.
2 ½ cups heavy cream
1 cup ricotta cheese
¼ cup sour cream or yogurt
1/3 cups sugar, organic unrefined
1 Tbsp. vanilla extract
1 packet plain unflavored gelatin (about 2 Tbsp.)
1 cup berries of choice
1 tsp honey, raw
Sprinkle gelatin over ½ cup heavy cream in a medium saucepan. Let stand 5 minutes or until gelatin softens. Stir in the sugar and vanilla. Cook on low heat until the gelatin and sugar are completely dissolved, stirring frequently without letting the mixture boil. Place cream mixture, ricotta cheese and sour cream in a blender or food processor. Blend until smooth. Using a hand-held mixer whip the remaining 2 cups of heavy cream until it forms soft peaks. Gently fold the whipped cream into the ricotta mixture. Pour into desired serving dish(s) and refrigerate for at least 2 hours or until thoroughly chilled and set. Mix the 1 teaspoon of raw honey with fresh berries and arrange on top before serving. Buon Appetito!
